Using a nice floured table, roll the pasta to thin out the pasta sheet. This makes it easier when running the pasta through the machine. Then just let the Imperia Pasta Machine do all the work. With each pass of the pasta, dial the machine down one number to create long, thin sheets of pasta.
Fold the pasta gently while sprinkling it lightly with flour. Then cut into your desired length, keeping in mind how long the pasta will be in your bowl. Run the cut sheet back through the Imperia Pasta machine with the cutter attachment in place, to cut it into fresh tagliatelli pasta. Hang the pasta to dry on a rack.
